A low key aperitivo cocktail that can keep you peddling throughout the night.

Legend has is that Italians would be peddling away from cafes after happy hour indulgence. Some having a bit too many cocktails, they named one after the getaway transportation common in the local villages. Similar to a Venetian Spritz build, dry white wine takes the place of a Prosecco option. We love using indigenous varietal wines like Verdicchio, which has minerality, citrus, broom & straw tasting notes, and a full enough body to pair up with a Campari like red bitter.

3 oz Dry white wine (Verdicchio, Carricante, Grillo, Vermentino)

2 oz oz Campari

Top with soda water

Build in a stemless wine glass, add ice & top with soda water. Garnish with a lemon wheel.
